    Egg-less cake #1

    The first trial I used a Betty Crocker cake mix, Chocolate Fudge, and the standard egg replacement using flax seed meal. Using flax seed meal, one tbs of meal mixed with 3 tbs of water replaces one egg. The cake mix called for 3 eggs so I needed 3 tbs of flax seed meal mixed in 9 tbs of water. I mixed this up and let is sit for 10 minutes for the meal to absorb the water.

    Except for the egg part, everything else remained the same. I did add some chocolate chips to the batter, just because I like them in a cake.

    Results: The cake came out very good. I liked it and it did not last long before it was all eaten. It was moist and tasted very god. It was a bit crumbly. Maybe I need to bake it a bit longer. I'll try that next time.

    Now, I need a piece of cake. I need to bake another one.

    Since my grandson

    had a very bad allergic reaction to eggs, everything he eats must be egg-free. So I can do my part by making cakes without eggs. I have a few recipes for vegan cakes. I have made them and they have turned out OK. At least I like them and eat them.

    But I am experimenting with substituting various ingredients for the eggs in cake mixes. Cakes mixes are super easy to make, they come out moist, and taste good.

    I may end up eating the whole cake, but that is OK too. I like cake.

      @bob1623 The Ms Cupcake recipe book is amazing and full of delicious recipes... Also the Hare Krishnas do not use eggs in their cooking so it is worth looking up some of their recipes, Kurma Das has a recipe for Carob cake but I use cocoa so turn it into a chocolate cake... I also veganise it as it uses dairy. This cake is much loved and has been baked for many, many birthdays... Vegan cooking/baking has changed massively, I make so many cakes/savouries that go down a treat and often people do not know they are vegan. I like telling them after they have eaten :-)

        @flowergirl Thanks for this info. I will check it out.

        I know these egg-less cake mix cakes are likely not vegan, but close enough now. Telling people they are just egg-less is fine. If I told them they were vegan, no one would eat it. They look at me as if there were poison in them.

        Oh well, someday they will learn.

          @bob1623 I know what you mean... Immediately people know something is vegan, they turn up their nose and make a face... Never ceases to amaze me. I know if I did that to something with meat in it, I would be regarded as fanatical!!! You will be able to get some of those recipes online free, Isa chandra Moskowitz is another vegan cook with some brill recipes... Post punk kitchen is her blog... Happy baking

            @flowergirl I understand you completely. I run into the same thing. I am considered somewhat crazy for the way I eat. The thing is, the people giving me the most grief and the ones with the multiple health issues.

            Oh well. And hence today's inspiring quote. I just ran across it. It is kind of appropriate.

            And yes Isa. I have two of her cook books. Her recipes are amazing. I love them. And most are very easy. I just made Trumpet Mushrooms with asparagus last night. It was very good.

                @ahorrasi No, not completely. When I cook, I cook vegan, but it mainly for myself. My family members all still eat meat and dairy. So, when we go out to eat, I make my best effort to eat vegan, but most places I have to settle for at least vegetarian. It is my social compromise.

          @bob1623 lol some of the best things ive eaten were vegan, cupcakes, cookies, et all. I even made a mean pecan pie tart completely vegan in my day, i think used a lot of flax/coconut oil

            @ahorrasi I understand you completely. I have eaten some amazing vegan meals. I have a friend who is completely vegan. We go out to eat to a nice vegan restaurant near her house a lot. I think the food is amazing.
