My first recipe is going to be a Rachel Ray recipe from a cookbook. It’s called “Parmesan-Crusted Chicken Breasts with Pesto Sauce and Big-Mushroom-Veggie Saute.” Sounds delicious! I’m going to give it a try for dinner on 1/7!

I’ve never really tried to make any of her recipes vegetarian. My husband usually likes to have some sort of meat in a meal.
I have tried tofu and it didn’t work out so well. Maybe I’ll give it another shot though. I do like miso soup!
Well the first thing is to find out what kind of tofu you want to use.
The thing is that tofu has no flavour by itself.
You MUST marinate it and/or cook it with other stuff that has a lot of flavour.
There are many different textures that you came make with tofu also.
If you have ever ordered chinese with a tofu product in it it was most likely limp and soggy.
Kung Pow Tofu is amazing!
Or you could also try the tofu at Noodles Co.
I’m not sure if you have one by you or how big of a chain it is but their tofu is firmer and most people prefer theres coked that way.
For that you need Extra Firm tofu.

you really have to play around with it and be imaginative with it for it to turn out its best!
